This Dolcetto from Jessica and Sam Bilbro is comes from the Fox Hill Vineyard in Mendocino. One third was fermented with whole clusters using carbonic maceration, and the remainder using more traditional methods. This has a really fresh nose of wild cherry, red currant, baking spice, berries, smoke, dried herbs, and rose pedal. It is incredibly vibrant, with a lovely core of fresh fruit and firm tannins. The finish is long and dry. It is a lovely wine now, but can use a year to show its best. Enjoy it over the next 5-7 years. (Best 2014-2020) - July, 2014 - (MD)
