DOMAINE SAINT PRÉFERT Châteauneuf-du-Pape 'Collection Charles Giraud' 2007

This is a phenomenal wine, with layers and layers of complexities and stunning depth. Such pure fruit with dark plum reduction, raspberry ganache, biter sweet chocolate, wet rock, mesquite, roasted coffee and cinnamon notes at the forefront. The body is full with muscular tannins and impeccable structure.  Everything all wraps up on the long finish where it picks up more dense fruit, biter sweet chocolate, coffee and mineral. The thing that really puts this into a class of its own is that it's just so complex, you find something new each time you sip. We decanted this wine for 4+ hours and it needed it to show its potential. However, I would highly recommend giving this more time to develop in the cellar to reach its full potential. I don't think its possible to find a wine more complex then this and I can see this wine being perfect for many, but for me it is falls just short of that. (Drink 2015-2037) - November, 2011 (JD)
