Just like 'La Source' the grapes used for 'Summum' come from the old Chardonnay Dijon 76 vines planted in 1984 in the middle of the vineyard. The wine was aged 11 months with 25% new French oak, then further aged in tank for another five months, on lees, before bottling. As the wine opens it delivers complex aromas of honeydew, red delicious apple and oak. This leads to flavors of poached pear, Meyer lemon and cantaloupe. The mouthfeel is fat and viscous and the acidity cuts through the fruit beautifully. This has a 30 second plus long finish that lingers. Wonderful effort by Evening Land.
