BOUCHÉ Champagne, Saphir Extra Brut N/V

The 'Saphir' Champagne is made from the House's oldest vines dating from 1960. It composed of 70% Chardonnay, 20$ Pinot Noir and 5% Pinot Meunir, which is aged 10 years in the cellar of Champagne Bouché before release. It offers lovely aromatics of baked apples, pears and lemon oil, with hints of honey, toast and chalky mineral nuances. On the palate this displays a wonderful elegant side, but with plenty of texture framed that is framed by underlying acidity which drives this wine through the inish. Overall this is a fantastic bottle of Champagne that is drinking beautifully today and should continue to drink lovely with some additional cellaring.
