The 1990 Fay Vineyard Cabernet Sauvignon is still showing plenty of appeal after nearly 30 years. Aromatics of dried cherries, cured meat, exotic spices with hints of sweet tobacco all take shape. On the palate this is balanced and silky, with remarkable finesse as the tannins have resolved beautifully. Overall, a simply gorgeous wine that is absolutely delightful, however for those still with some in the cellar, it looks as if the time has come to seriously consider approaching them.
