The Dance Chardonnay is kept on the lees for 17 months in 28% new French oak, 42% neutral French oak and 42% concrete tank and only about ⅓ of the wine undergoes malolactic fermentation. A stunning nose of white wild flowers, honeysuckle, green melon, toasted cashews, fresh apricot and a spec of dried banana present themselves nicely. The palate delivers medium plus acidity, high tension, and is medium to full-bodied with additional notes of yellow apple and sweet baking spice. 627 cases produced. My favorite Dance Chardonnay from all the vintages I’ve tasted.
