LA CHANTERELLE Red Wine 'Conchie' 2015

The 'Conchie' by La Chanterelle is a Cabernet Sauvignon based wine that was sourced from the Yakima Valley. Grapes were cold soaked for three days and then underwent 50% whole stem fermentation. The wine was then aged in French oak and bottled in April 2017. The Cabernet Sauvignon starts off with aromas of red currant jelly, blackberry pie and milk chocolate shavings. Rich and seductive on the palate, yet maintaining some nice acidity, the wine reveals dense milk chocolate covered cherry, blackberry jam and coffee ground flavors. This is a simply fantastic effort that will cellar well over the next decade.
