SAVIAH CELLARS Cabernet Sauvignon, Walla Walla Valley 2021

This entry-level Cabernet Sauvignon was aged 17 months in 30% new French oak. Medium purple in color, it gives off a nose of cherry and slight mocha. Initially slightly tight and tannic, on the palate it showed unripe plum, black cherry, tobacco and slight bittersweet chocolate. With time in the glass, it began to unfurl and settle down, continuing to highlight the plum and black cherry notes. Light bodied for this varietal; a few years of cellaring will be the friend of this well constructed wine.
