Pour a glass of the 2021 Anonimo Pinot Noir from Ayoub and then let it sit for 10 minutes, giving it plenty of air. Fermented with 5% whole cluster, gives it some added structure and tannin. A glimmering medium ruby core with a lighter purple rim in the glass, it’s an earthy, spicy, and blue-fruited effort that is only going to get better with time. Notes of wild blueberry, black cherry, toasted spices, graphite, shaved chocolate, and dried Blood orange peel are all aligned. Sweet tannins, lemony acidity, and a medium-bodied mouthfeel produce a gorgeous wine that will be better in 2024. 320 cases made.
