The 2020 Covalle Cellars Cabernet is made up of 97% Cabernet Sauvignon and 3% Cabernet Franc and is made from all Red Mountain fruit from the Quintessence Vineyard. It’s aged for 20 months in 100% new French oak barrels and displays a shimmering dark ruby core with a light purple rim. Incredibly floral and blue-fruited on the nose, it gifts those telltale Red Mountain notes of boysenberry, dried lavender, mountain sagebrush, toasted anise, scorched caramel, cedary herbs, and ground clove. Tannins are a bit tight and will need a heavy and lengthy decant or a few years in the bottle to soften.
