A blend of 66% Chardonnay, 27% Pinot Noir, and just 7% Pinot Blanc, this wine was also aged for 9 months in neutral French oak barrels and spent 30 months en tirage. Another stunner from the team at Corollary. I’m loving how sparkling wine from Oregon is not only becoming more popular but becoming more delish with each passing vintage. Notes of green apple, toasted brioche, lemon zest, and hints of dried thyme and spice jump in the mouth. The mousse starts off a bit aggressive but settles down after a few minutes in the glass. Racy acidity and a lengthy finish complete the wine. About 200 cases were made.
