The 2016 Cimarossa Vineyard Cabernet Sauvignon is another total gem from Tor and winemaker Jeff Ames in this vintage. Sourced from a hillside on Howell Mountain, were vines are planted on a volcanic cylinder cone at 2,100ft with red volcanic rock and dust soils. This terroir beautifully reflects in the wine, as it begins withs wonderful aromas of red and dark currants, which are laced with violets, licorice, dusty minerals and crushed stones. On the palate this shows wonderful depth and concentration, with beautifully polished tannins that provide serious structure. This displays a wonderful combination of elegance and power, while remaining balanced and precise through the ultra-long finish. This looks to be another total success from the team at Tor and should go on to offer a drinking window that spans decades.
