DOMAINE FRANÇOIS RAVENEAU Chablis Premier Cru 'Foret' 2016

The 2016 'Foret' Chablis is currently wound up tighter than a top at the moment. Needing more than an hour of air contact to begin to show a sign of life, it slowly begins to evolve aromatically. As this gradually takes shape in the glass it displays aromas of nectarine skin, green apple, clove and wild mushroom tones that complement the beam of salinity. Characteristic of the vintage, the palate possesses incredible energy and freshness, showing bright citrus zest, diatomaceous earth, peat moss and a sterling minerality all the way through the finish. Overall the 'Foret' looks to be a sucess in this extreamely difficult vintage. While this shows flashes of brillance in its youth, it also possesses the potential to offer a drinking window that extends over a decade. Given Raveneau's track record, I only expext this to become more compelling over time, however with the low-yeilds in 2016 there likely won't be alot to go around.
