APERTURE CELLARS Cabernet Sauvignon, Alexander Valley 2016

The 2016 Alexander Valley Cabernet Sauvignon includes 7% Merlot which spent 18 months in 50% new oak. Another fantastic release from Jesse Katz, this begins with wonderful inviting aromas of ripe blackberries and crème de cassis woven together with pencil shavings, dried loam, dark chocolate and spices that all soar from the glass. On the palate this is full-bodied, rich and opluent, with a ripe core of dark fruit and spcies. This monumental Cabernet also possesses a nice touch of underlying acidity, which gives it enough lift as it leads up to the multi-tiered, voluptous finish. While fabulous now, this should continue to evolve nicely in the cellar for quite some time.
