The 2018 Chablis from Domaine Louis Michel is a lovely showing in this vintage. The Chardonnay for this Cablis was sourced from from eight different areas, which are mainly located on the left bank of the Serein river, Pargues in the Forêts valley, and Vaillons. They are blended with the parcel located just below the Montée de Tonnerre. The wine itself bursts open with a lovely aromatic profile of green apples, peach skin, lime zest and hints of dragon fruit, which are laced with crushed stones and oyster shell nuances. On the palate this is bright, and beautifully textured with a gorgeous saline character that runs through the mineral-laced finish. This is wonderful to approach early on, but should become even more compelling with a year of bottle age.
