SOTER Brut Rosé, Yamhill-Carlton 2016

The sparkling wines project from Soter is a fun undertaking to watch unfold and a delicious one to taste. A combination of 78% Pinot Noir and 22% Chardonnay was fermented in barrel, aged 8 months in barrel prior to bottling and then spent 3 years on the lees before disgorgement. These wines take time, and winemaker Chris Flagwood is in no hurry to release them until they are in perfect condition. Spilling from the glass are aromas of raspberry, lemon peel and brioche. The palate is crisp and bright and reveals notes of lemon, nectarine, white grapefruit and freshly baked bread. Highly recommended. 890 cases produced.
