TOR Cabernet Sauvignon, Napa Valley 2011

The 2011 TOR Cabernet Sauvignon is fantastic, with inviting aromas of fresh black cherries and ripe currant along with herbs, spices, chocolate and even hints of violets begin to emerge after extended air contact. The opulent, silky texture is layered, well structured and demonstrates wonderful finesse. It finishes up long and caressing with currant, graphite and some chocolate notes lingering on and on. Tor and Winemaker Jeff Ames have done an incedible job assembeling this wine with fruit coming from the Mast Vineyard in Yountville (70%), Cimarossa Vineyard in Howell Mountain (22%) and from Beckstoffer To Kalon in Oakville (8%). Although this is delicious right out of the gate, it will be at its best with just a bit more bottle age, or if you can resist, lay it down and watch it continue to evolve over the next decade.
