Philip Togni produces excellent Cabernet consistently year after year, and his 2007 Napa Valley Cabernet Sauvignon is another to add to the long list. It is jammed packed with dark currant, sweet cassis, bell pepper, tar, tobacco, mineral and even hints of floral mixed in. This wine is layered and complex, showing a side of elegance as well. The round dusty tannins guide the fruit effortlessly into the long delicious finish, where the wine continues to develop on your palate. This will only get better with more time to settle in, just an outstanding wine and everything I love about Napa Valley Cabernet.
