Birichino’s 2016 Chenin Blanc from the illustrious Jurassic Park Vineyard backs up its own story. At 335 meters above sea level on a dinosaur boneyard of sand and limestone soils in Santa Ynez, the low vigor and small berries result in a sublimely structured wine with unmistakable purity. Fermented with indigenous yeast and skipping malolactic fermentation, Chenin Blanc characters shine through with aromas of lime blossom, bartlett pear, and white pepper. Bright acidity refreshes the palate alongside flavors of citrus zest and tobacco leaf while its partial aging in neutral French oak further shapes the wine.
