The 2016 Mountain Peak Vineyard Cabernet Sauvignon is sourced from an elevation of 1,400ft atop Atlas Peak. The vineyard thin rugged soils are composed of mostly rock and content and result in very low yields. The fruit is aged 20 months in partially new Sylvain and Taransaud Barrels. The result is a gorgeous Cabernet with is beautifully structured. Aromas of dark cherries and cassis come together with fresh herbs, florals, graphite and crushed stones all developing in the glass. This elegant Cabernet is medium-bodied, well-balanced and silky, with bright underlying acidity providing wonderful freshness through the finish. Overall, this is a refined Cabernet, which I would expect to continue to develop over the course of the next decade.
