DOSSIER Sauvignon Blanc, Yakima Valley 2021

This 2021 Sauvignon Blanc from Dossier is aged for 12 months sur lie in a combination of French oak and stainless steel. It sees a small 8% of new oak to give it a roundness and needed structure on the palate. A fresh bouquet of tropical fruits, ripe kiwi, yellow flowers, and gooseberry reign supreme on the nose. While the palate treats you to flavors of passionfruit, dried pineapple, gooseberry, and a touch of Asian and oak spices. It’s definitely a more rich and more dense style of Sauvignon Blanc, and one that I really enjoyed. Just a small production of 229 cases was produced.
