A fun sparkling wine made in the Traditional Method that is a blend of 50% Pinot Blanc and 50% Pinot Noir and disgorged in February of 2021. The bottles were aged on the lees for 23 months before disgorging and contains an alcohol 13.5%. A yeasty character delivers on the nose along with notes of ripe nectarine, cantaloupe and some freshly baked brioche. The palate is fresh and vibrant with a tight mousse and flavors of green apple and underripe stone fruits. Drink over the next 8-9 years. A very limited production of only 40 cases produced.
