The 2019 Cavatina is the first vintage of Cabernet from Napa Valley from Paul Lato and is aged for 19 months in 40% new French oak barrels. Sporting a deep purple core with a neon red rim in the glass, it showcases what’s to come on the nose - think aromas and flavors of freshly baked blackberry pie, macerated boysenberry, black currant, cassis, cigar box, black licorice, and pencil shavings. The palate is a bit leaner than the nose, giving flavors of wet earth, black peppercorn, and cedary herbs, finishing with elevated acidity and silky smooth tannins.
