Another single-clone Pinot Noir from Hyland Estates, the 2021 Dijon 115 stuns with a bright neon ruby core and an orange rim. More herbaceous but still incredibly fruit-forward than its siblings, this one is heavy on the dried herbs and wet earth. Presenting notes of huckleberry preserves, dried blackberry, and singed sage, with just a pop of dried mint, it’s absolutely delicious. The rounded tannins are fresh yet present and are balanced by the fruit-forward and earthy finish on the mid-palate. Keep this one in your cellar for the next decade.
