Fermented with fully-destemmed fruit and aged for 18 months in 10% new French oak barrels, the Eola-Amity Cuvée showcases a lovely neon ruby core with a pinkish rim. It opens to notes of dried black cherry, wild blueberry, toasted earth, licorice root, pine forest, dark chocolate, and dried poultry herbs. Acidity checks in on the high side, while tannins are crunchy and need some time to integrate. The finish builds over the course of a minute and finishes long and elevated. 518 cases produced.
