This interesting Elevage Pinot Blanc is aged in 100% neutral French oak barrels and undergoes malolactic fermentation to give it that added weight and structure on the palate. It delivers screaming acidity alongside ripe yellow apple, honey-coated pear, beeswax, white button mushroom, and dried poultry herbal notes. Only 100 cases were made. I’d love to see where this one goes over the next 10 years as I think I will be pleasantly surprised. Just 100 cases were crafted.
