Fruit for the Seven Springs Gray Label comes from the South Block and is aged in 50% new French oak for 12 months and then 6 months in stainless steel. The brilliantly defined bouquet of grilled lemon citrus, wet crushed stone, dried fennel fronds, and a hint of dewy meadow flows from the glass. It’s more linear on the palate than Seth’s other 2020 Chardonnay’s and gifts glowing acidity, a stunning structure, with a lingering saline and mineral finish on the back palate. 70 cases were made.
