The Chardonnay was aged 11 months in a combination of concrete eggs, stainless steel and 2 year old oak prior to bottling. This is made from a blend of Dijon clones 95, 44 and 76 and opens with aromatics of unripe pear, red delicious apple, wild mushroom and hints of nutmeg. There are ripe flavors of poached pear, creme brulee, vanilla and hints of nutmeg. This has the structure to age nicely with some short-term cellaring. (Best 2017-2025) - January, 2017 (OB)
