Nikolaihof Wachau is one of the oldest and historic estates in Austria. It spans about 2,000 years, and was, at various times, a Celtic place of worship, part of a Roman fort, a bishop's seat and an administrative centre.

The Saahs family took over Nikolaihof Wachau in 1894, and continued to practice the same traditional methods that were set in place by the monks. The vineyards have never been conventionally farmed, and have always been organic, remaining so today. The estate follows accordance with the regulations of the Demeter Association, the strictest control system in biodynamic farming. No herbicides, fertilisers, pestizides or sythetic sprays are used in the vineyards. Instead, the Saahs family uses stinging nettle manure, valerian drops, horse tail tea and its own specially produced Demeter-preparations. The entire estate is run according to biodynamic Demeter rules and undergoes regular state inspections.

When it comes to winemaking, natural fermentations are the rule, in Austrian oak vessels, deep in the cold, 700-year-old cellar. The wines are only bottled and released when they consider that the wines are ready to drink, with some wines aging as long as 15 years before being bottled.

Today, Nikolaihof produces some of the finest wines in all of Austria. Riesling and Grüner Veltliner are the primary varietals being produced, however they also grow a small percentage of Weissburgunder, Malvasier, Neuburger, and Chardonnay. The wines are beautiful expression of the varietals and are made in a dry-style, with remarkable precision and elegance. Year-after-year these are some of the most compelling wines we taste, and have earned a spot in our annual list of Top 100 wines multiple times.
