The 2016 Volcanic Hill Cabernet Sauvignon is absolutely stunning. This blend of 88% Cabernet Sauvignon, 8% Merlot 2% Cabernet Franc and 2% Petit Verdot displays an impressive dark, opaque color, which is followed by striking aromatics. Seductive nuances of ripe black currants, black cherries and blueberry are woven together with violets, spices, herbs, charcoal and hints of earth, that all take shape beautifully. On the palate this is simply gorgeous, showing incredible purity and freshness, with layers of ripe dark fruits that are delivered through a full-bodied frame, which is impeccably structured and polished. It continues to impress as it displays a wonderful enveloping texture that persists all the way through the long supple finish. Overall the 2016 is utterly captivating and looks to have reached the limit of perfection in this vintage. WhileVolcanic Hill is certainly marvelous today, it should also continue to develop beautifully for many years to come.
