The 2016 Cervantes Cabernet Sauvignon is absolutely fantastic. Composed of 76% Cabernet Sauvignon, 23% Cabernet Franc and 2% Petit Verdot this instantly begins to impress with its seductive aromatics of ripe blackcurrants, black cherries, baking spices, violets, graphite shavings, crushed gravel, fresh sage, licorice, pipe tobacco and a touch of toasted oak which all come together and burst from the glass. The palate is full-bodied and voluptuous, with a deep layered core that is concentrated with gorgeous ripe dark fruits, pencil shavings and spice notes that resonate throughout the wine. It continues to impress as it displays outstanding overall balance, with an utterly seamless texture that expands beautifully across the plush finish. While this is already drinking incredibly well today, it should also go on to have a brilliant future ahead and evolve gracefully for years to come. This is an extreamly exciting project, with the winemaking duties lead by one of Napa Valleys most talented winemakers Andy Erickson.
