The 2021 Rarefied Air Cabernet Sauvignon is simply stunning. It bursts open with profound expressive aromatics of ripe blueberries and black currants, accented by violets, graphite, and gravel. It displays intense fruit aromatics with wonderful freshness. On the palate this is full body and remarkably concentrated with layers of black and blue fruits that are surrounded by loam, graphite and florals. This goes onto display, outstanding overall structure with beautifully polished tannins and a round plush mouth feel leading up to the finish. Sensational. This will be bottled in 1.5L format only.
