The 2021 It’s All Good Chardonnay is another scintillating Chardonnay by Paul Lato. With fruit coming from old vines of 32 years of age, it expresses the sandy clay soils beautifully. Aged for 16 months in about 50% new French oak, it has developed a lovely structure across the palate. Featuring a light lemon core with a silvery rim in the glass, the nose pops with Golden Delicious apples, apricot skin, and blanched almonds alongside shades of lemony herbs and honeycomb. Another winner that I highly recommend. Only four barrels were produced. Editor’s choice.
