The 2021 'The Ultimate' is composed of equal parts Cabernet Sauvignon (50%) and Cabernet Franc (50%). Winemaker Jean Hoeflinger has crafted a fabulous wine, highlighting the qualities from six prestigious vineyards across the valley and the result is nothing short of spectacular. It begins with beautifully perfumed aromas of ripe black cherries, blackberries and hints of blueberries that sit along side by violets, graphite, fresh herbs, licorice and crushed gravel that all come together beautifully. This is full-bodied, concentrated and polished, as it delivers layers of delicious sweet ripe dark fruits that cascade across the palate. It continues to impress with its outstanding overall balance and depth, with a sweet ripe core that is laced with gorgeous acidity that provides incredible freshness and verve heading into the long, supple finish. Similar to all the wines from this stellar lineup 'The Ultimate' will be accessible early on, but also has the potential for a multi-decade drinking window.
