First sparkling wine (2022) that Yellowhawk released with fruit coming from the Genach Vineyard. Chardonnay fruit that is crafted in the traditional method. Aromas of Meyer lemon zest, dried pineapple, and toasted almonds with a hint of green tea leaf. The aggressive mousse dissipates after some time in the glass. Only 10% alcohol - very lean and crisp. 740 cases produced.
