PAUL LATO Chardonnay, California ‘Kokoro Limited Edition’ 2019

A tribute to the great Japanese Chef, Nobu Matsuhisa, Kokoro means “the vibration coming from the heart.” The reason for the California designation is that this Chardonnay comes from grapes of several different vineyards throughout the state. It’s aged for 16 months sur lie in 75% new French oak barrels. Let’s be honest, Paul Lato doesn’t produce a bad wine. Every single bottle I have tasted has been not only good, but stellar, even during difficult vintages, which is a testament to his skills, knowledge, and palate. The nose is old world meets new world - it’s fresh and light on the nose, but is incredibly complex as the wine warms in the glass. Notes of ripe white nectarine, toasted tree nuts, dried pineapple, butter, and just a touch of baking spice. It promises beautiful acidity and a fruit-driven, structured finish that goes on for ages. Highly recommended. Only 100 cases produced.
