This lovely sparkler is a blend of 40% Pinot Noir and 40% Chardonnay that sports just a touch of residual sugar, which enhances some of the lemon, lime and plummy fruit flavours on the palate. The nose pops with white wild flowers, honeysuckle honey and red pear. It’s very balanced and would go perfectly with some spicy Thai food. A lovely wine with a lengthy finish.
