The 2016 Vintage Brut Rosé by Domaine Serene is a mélange of 70% Pinot Noir and 30% Chardonnay. It spent 8 months in 10% new French oak barrels and 68 months in bottle. A lovely nose of strawberry essence, freshly baked croissant, whipped cream, and sweet spice fill the glass. A delicate mousse dances on the tongue, while the finish is pronounced with a lovely minerality that shines through. Another amazing sparkling wine from the winemaking team at Serene. 245 cases made.
