The 2021 Walla Walla Valley Cabernet Sauvignon from Passing Time was aged in 60% new French oak and features grapes from Pepper Bridge (44%), Seven Hills (31%), and Summitview (25%). It makes a grand first impression and doesn’t let go. There is tremendous power and density but it still delivers some red-fruit aspects on the palate. Cedary herbs, vanilla, and tobacco leaf play second fiddle, leading to a wine with sweet, crunchy tannins and wonderful purity. 175 cases made. Highly recommended.
