L’ECOLE NO. 41 Cabernet Sauvignon, Walla Walla Valley 2020

Composed of 100% Cabernet Sauvignon and raised in 30% new French oak, the 2020 L’Ecole Cabernet Sauvignon Walla Walla Valley is a wine that needs plenty of air or cellaring to show its stuff. Deep purple in color, it has a nose of plum and violets. Though it packs some serious tannins up front, it does show off dark blue and black fruit notes and a double dose of raw tobacco on entry. After some prodding, slight licorice beings to peek through the initial tight and closed approach. I had to give this wine a little over two hours to begin to show its stuff, and when it did, the licorice notes took a more prominent role and the fruit components stayed in the background. This wine needs 3 to 4 years of cellaring to unwind, and then should have 10 years of good drinking ahead of it.
