A mélange of 53% Pinot Noir and 47% Chardonnay, with 3.0 g/l dosage and disgorged in the summer of 2021, it showcases a stunning pink salmon color in the bottle. Out of all the Pashey wines I’ve tasted, this one delivers the most body and fruit-forward characteristics. Think notes of fresh raspberry, lemon-lime citrus, cinnamon-coated pear, and some lemony herbs. The mousse starts a bit aggressive but calms down in the glass very quickly. A lovely wine that would pair with just about anything, enjoy this one over the next 10 years or so. Just 404 cases made.
