This combination of 60% Pinot Noir and 40% Chardonnay was aged for 3 years in half stainless steel and half French oak barrels. A mélange of 50% 2018 vintage wine and the rest reserve wine. Soter makes some of the best Sparkling Wine in the valley, and this specimen is outstanding. Aggressive mousse, upon pouring, quickly dissipates into a lovely balanced mouthfeel that is elegant and inviting. Aromas of sliced pear. Toasted brioche, white mushroom, and bruised apple fall dignified on the nose. The palate is more apple and sweet spice focused with perfected levels of acidity and a long finish that goes on for ages. Enjoy this one now or over the next decade. Highly recommended. About 340 cases made.
