Fermented and aged in French oak barrels for 12 months, followed by another 5 months of aging in stainless steel, the fragrant nose starts off a bit reductive and then develops quickly to give aromas of yellow apple, lemon pith, toasted cashews, creamy butter and some brioche notes. It reminds me of an aged Champagne that has lost its bubbles. Don’t get me wrong, the wine is delicious and unique in character and flavor - dominated by citrus and apple fruits, toasted brioche and salty hazelnuts. 261 cases produced.
