The sparkling wine coming out of Oregon is quickly becoming world-class, and this 2018 Blanc de Blanc Extra Brut from Pashey is a great example. It’s made in the traditional method with 2.25 g/l dosage and disgorged in the summer of 2021. Boasting notes of fresh green apple, underripe white peach, citrusy herbs, a touch of tropical fruit, and a hint of toasted brioche merge beautifully in the glass. It’s delicate on the tongue and finishes crisp but round at the same time. Enjoy over the next 15 years. Just 295 cases made.
