The 2021 Done & Done Chardonnay from Paul Lato is absolutely stunning and is the best Done & Done I’ve tried from the estate. A nose that starts a bit shy with saline and crushed rock tones taking center stage, but waiting on stage left and stage right is grilled lemons, dried hay, white nectarine, toasted walnut shells, and flinty minerality. Impeccable balance and structure hit the palate, and don’t let go. Finishing with shades of toasted cinnamon and honeydew melon that go on for minutes. Enjoy this now or over the next decade. Highly recommended.
