The 2019 Coobsville Cabernet Sauvignon from Paul Hobbs is fantastic. It begins is wonderful aromatics of ripe dark currants and blueberries that are woven together with mocha, spring florals, pencil shavings and dried herbs that all emerge beautifully from the glass. On the palate this is full-bodied and voluptuous, with layers of gorgeous ripe dark fruits, sweet spices and mocha that continue to build on each other leading up to the velvety finish. This is drinking incredibly well upon release, but should also offer at least a decade of evolution in the cellar. Composed of 85% cabernet sauvignon, 7% cabernet franc, 6% petit verdot and 2% merlot.
