The 2013 Passing Time Cabernet is a stunner from highly talented head winemaker Chris Peterson. This wine is an amalgamation of 97% Cabernet Sauvignon (mainly from Discovery Vineyard) and 3% Cabernet Franc. The 80% new French oak component is well-integrated and contributes to a silky mouthfeel. This impressive Cabernet begins with aromatics of anise, pipe tobacco, and crème de cassis with suggestions of black cherries. This leads to flavors of anise, blueberry and crème de cassis with mocha. The eye-catching texture created by Peterson has his signature on the wine. Despite the heat of the vintage, there is a Bordealaise feel to this plush wine. While this warm vintage wine this is drinking beautifully right now, I think this will cellar gracefully into the next decade. (Best 2016-2028) - March, 2016 (OB)
