The 2015 'The Highlands' Red Wine was sourced from a high-density Cabernet Franc and Petite Verdot vineyard, and a old-fashioned vineyard with 25 year old To Kalon-clone Cabernet Sauvignon head-trained vines, both in/near the tiny Happy Canyon. The wine was aged in a combination of new and aged French oak for 27 months prior to bottling. The nose is highly perfumed, and after extended air contact it begins to unveil ripe blackberry cobbler, green olive, black tea and coffee grounds. The palate shows wonderful weight, poise and texture, yielding intense dark fruit flavors and exuding elegance despite the obvious heat of the vintage. This is a simply marvelous effort from winemaker, Mattias Pippig.
