The 2020 Coombsville Cabernet by Paul Hobbs rested in 71% new French oak barrels for 20 months. A deep dark purple core penetrates the glass. Aspects of dark black plum, black currant, dried blackberry, toasted cinnamon, and bitter herbs are all present on the palate. Tannins are a bit sticky, and the acidity is elevated. It finishes with a delicious black fruit and dried poultry herb note on the back palate. It’s still incredibly young and needs another 1-2 years in bottle to come together. 3313 cases produced.
